Chef Bernard Loiseau himself is no longer with us, but his kitchen carries on, in the restaurant and hotel that now bears his name. And just because it’s known as a restaurant first doesn’t mean there’s anything second-class about the hospitality — this is something more than just the typical couple of rooms stuck upstairs as an afterthought.

Take the spa, for example — it’s not every country inn that features a Roman-style spa, complete with sauna, mud bath and fitness center. There’s an outdoor pool as well, in the midst of what the French call an English garden, which is itself the perfect venue for an aperitif or just a spell of good old-fashioned lounging.

There are not one or two but 33 rooms, each one individually designed and decorated, from the humble standard rooms to the luxurious junior suites, and many come with balconies or terraces with views over the central garden.

Public spaces include a library and a billiards room named after Charles X. And then of course there’s the dining room, where Patrick Bertron pays tribute to Bernard Loiseau’s cuisine. And it wouldn’t be Burgundy without a cellar full of first-rate bottles — here you’ll find the best the region has to offer.
