Michel Bras is the name of the hotel, but it's the name of the reataurant first; and before that, the name of the man, one of France's (and therefore the world's) best chefs. Bras is largely self-taught, the product of a vocational school and of years cooking alongside his mother, a world away from the rarefied world of Parisian haute cuisine. His is a stripped-down and minimal cuisine, his approach more ascetic than artistic — still, it has earned him three Michelin stars and made this hotel, on a stark and dry plateau above Laguiole, a magnet for gourmands who drive for hours, from all over France.

Some, especially those for whom food is life's greatest pleasure, may view the hotel at Michel Bras as an afterthought, a mere necessity to mitigate the inconvenience of the long approach — but that would be missing the point, as far as we are concerned. This is an extraordinary hotel in its own right, a tour de force of modern design, economical, a sort of functional Zen that is at odds with the flashy boutique design usually considered modern, and a perfect match to the cuisine, and indeed the philosophy, of Michel Bras himself.

The plan resembles three knives, or three stone-and-glass spikes, driven horizontally into the gently sloping ground atop the Aubrac plateau — the topmost in the row is the restaurant, and the two lower contain the guest rooms, all of which take in panoramic views of the entire plateau through floor-to-ceiling windows. The interiors are monochrome, in varying shades of grey and black, with no overly clever furniture or artwork to distract from the vistas — the whole thing an excellent example of the way the best in futuristic, minimal, even antiseptic design can perfectly complement the surrounding environment.

Isolated though it may be (and the seclusion makes a perfect honeymoon or getaway spot for anyone bored with sun and sand), Michel Bras is not inaccessible; Rodez airport is just 60 kilometers away, and is served by easyJet and Ryanair, among others. The cooking is certainly worth the trip, but for those in search of a unique hotel experience, or even just an uncommon twist on the typical French landscape, the hotel will not disappoint.
