The Pousada Flor da Rosa is a study in stark contrasts; it was built as a fortified monastery in the year 1356 and converted into a hotel some six centuries later, and here sharp-edged contemporary furnishings stake a claim to modernity beneath timbered ceilings and medieval stone walls. A swimming pool stretches out in the shadow of the monastery’s crenellated towers, and what must have been the refectory, with its columns and high arched ceilings, is now the hotel dining room, serving Portuguese specialties to hushed, whispering travelers.

The renovation is the work of the Portuguese architect Carrilho da Graca, and it’s a successful marriage of a modern boutique hotel to a unique historic site — rarely does such an audacious mixture of periods come off this well. Forget the paper-thin walls of hipster city boutiques; these stone walls were made for quiet contemplation, and the hotel’s gardens and olive groves remain as serene and tranquil as they must have been in the fourteenth century. Here you’re less than three hours from Lisbon airport, and yet hundreds of years from the hustle and bustle of modern city life.
