Around the back side of Mallorca is the island of Minorca, the minor to the major island — and around the back side of that is the port of Mahón, on the outskirts of which you’ll find Sant Joan de Binissaida, a lovely little farmhouse surrounded by olive groves and vegetable gardens, converted into a twelve-room boutique hotel, via some judicious renovation and the addition of a secondary building.
The town is picturesque, the hotel’s surroundings scarcely less so, and the situation offers the perfect blend: though on the grounds it feels secluded, it’s ten minutes from town and fifteen from the airport. Twelve rooms blend antique architecture and modern gestures, and they’re named for the great composers of the opera world, from Bach to Puccini to Händel. Roughly half are in the old farmhouse, and the others in the renovated barn building; all are very much up to the current luxury standard.
There’s some fairly well-equipped conference space, and at the other end of the wellness scale there’s a day spa and an 18-meter outdoor pool. And the ace in the hole, as is so often the case with Spanish hotels, is the cuisine — inventive updates on classic traditions, drawn from the seafood of the Mediterranean and the produce of the island.
