The Palais is named for its original occupant, the Grand Vizier of Jamaï, and the original palace building dates back to 1879. It became a hotel in the Thirties, and a new wing, much larger than the original palace, was constructed in the Seventies — but in a style remarkably comparable to that of the original “pleasure pavilion” building.
Fez is arguably the cultural capital of Morocco (and has at times been the political capital as well), and the Palais is its most exclusive and sophisticated hotel. Though every inch a modern luxury hotel, the Palais Jamaï has the look of an old-fashioned Moorish palace, with its dramatic columned atrium and the intricate detailing that ornaments seemingly every surface. The rooftop pool is gorgeous, as are the fountains and terraced gardens that surround the hotel.
Al Fassia, the original restaurant, is as old as the Palais itself, a traditionally Moroccan establishment, complete with Andalou orchestra and belly dancing. There are two more casual restaurants and an English-flavored jazz bar off the lobby. And just outside, a stone's throw from the hotel, is the Medina of Old Fez, the busiest in Morocco, packed with markets, restaurants, and mosques, where the streets resonate with the call of the muezzin. Guides can be arranged by the hotel.

What I liked:
The public spaces -- the bar, lobby, lounge, restaurants -- are all absolutely luxe and gorgeous and a wonderful pleasure to sit and spend time in. Wifi nonexistent in rooms, but since the public spaces are so good, this was not a problem. This is the kind of hotel you want to spend time sitting in, people watching, and enjoying the environment. The service was also excellent.
What the hotel could do better:
The room had that 'old building' smell that sometimes comes from ancient plumbing or something -- we experienced this a lot in our month of traveling in Spain and Morocco, but for the price we were paying at this hotel I think they should take care of it somehow. We had to sleep with the balcony doors open all night in order to air out the room. Also, our toilet was leaking water onto the floor.

What I liked:
The view of the medina and the location are great. The room service is quick at all hours. There is a spa. It's probably the most "full service" hotel in fez.
What the hotel could do better:
The hotel was very disappointing. It wasn't very expensive, but we were told it was the nicest in Fez, so we expected a genuinely luxurious experience. It desperately needs a makeover. The rooms are dated and the entire hotel smelled terrible the entire time we were there--a mix of urine and cleaning products. I thought that maybe this was just how things were in Morocco...but then we stayed at La Mamounia in Marrakech and every other hotel and Riad we visited there seemed much more luxurious and up to our standards. The concierge here didn't give us great advice about what to do in Morocco; gave us no warnings--and the guide we hired through the hotel was pretty dismal. They just kept trying to push goods upon us and get us to buy stuff, even after we told them we didn't want to be taken to touristy places that all sell the same things. We were adamant that we didn't want to shop; we wanted to see culture. It was pretty obvious that the guide was getting kick backs from friends trying to sell us "authentic" goods. We didn't feel like we were shown anything actually interesting. We live in NY and can get carpets at ABC carpet. We wanted to see museums, tombs, shrines, mosques, something of value! Not just commodities. The hotel's spa was decent. Not super luxurious but fine. I would not return here.

Review:
Our stay was a pleasure from the moment of our arrival: service was superb, room exquisite, breakfast was sumptuous. We will certainly return.
