Fierro Hotel starts with the fundamentals: good food and a good night’s sleep. For while there’s plenty to be said for their on-point contemporary interior design, and for their location in what may be Buenos Aires’ most fashionable neighborhood (Palermo Hollywood), and even their bubbling vista-rich rooftop pool — for all that, Fierro’s finest offerings are sustenance (deeply satisfying) and slumber (simply deep). In a world of hotels that claim to take great care to meet guests’ needs, here’s one that really delivers on the promise, beginning with the needs that matter most.

But how? Well, they start with a chef who learned his chops, so to speak, in a pair of two-Michelin-star kitchens, one in Bilbao and one in Valencia, before returning to Argentina and landing at this little twenty-nine-suite hotel in a largely residential neighborhood. That a hotel of this scale employs a chef of such talent says much about how it compares to the many mid-size, mid-range boutique hotels in Palermo (and we do mean many — they’re popping up like crickets from a cornfield). The food is in that deceptively simple new Argentine-international idiom — lamb and couscous, grilled octopus and rice, flatbread with salmon tartare — that only goes well under a deft hand. To state the obvious, the hand here is indeed deft.

What’s less obvious is one of the dirty little secrets of Buenos Aires, and Palermo in particular: for all those outdoor cafés along the leafy sidewalks, and all the beautiful people in those glassy, freshly painted restaurants, the places to dine and drink tend to be much heavier on style than substance. This controversial statement is issued not to twist the panties of the hypothetical reader who ate the most delicious steak of his life here some time past — or ate the flakiest empanada or most toothsome fresh-made pasta or chocolatiest gelato, or for that matter drank the most drinkable malbec — but to underscore the reason why a hotel with such outstanding food would matter in a neighborhood with so many dining options. In short, quantity does not equal quality. Of course when you stay at a hotel that cares as much about food as Ferrio, the staff can point you to the gems in the rough.

As for that deep slumber, it comes in the form of some truly dreamy beds, dressed properly in down and Egyptian cotton. Palermo Hollywood is a lively neighborhood and the excellent nightlife goes loud and late, so double-paned windows help as well, as do the stress-busting effects of a dip in the private rooftop Jacuzzi if you’ve booked the terrace suite.

Well-rested, full, maybe a little buzzed, there’s a lot to explore in Palermo Hollywood between the begrudged cafés. The neighborhood took its name when media professionals began setting up shop here in the mid-‘90s, but these days you’re more likely to find filmmakers and actors living and playing, not working. Combine the attractive crowd with the fact that dressing well is a proud cultural tradition for Porteños, and the sidewalks of Palermo Hollywood are like a runway show for the excellent designer shops that line them.
