The ancient walled city of Cáceres already feels like something out of a fairy tale, a big gorgeous pile of Gothic and Moorish and Roman architecture in the hills of Extremadura. And as long as you’re stepping into a sort of composite fairytale of old Europe, why not stay in a Renaissance palace? Palacio Carvajal Girón, you’ve probably guessed, is the Renaissance palace we’re thinking of, and it’s an impressive one at that, presiding over an old public square near the center of town.

It’s also an excellent hotel. Those of us fortunate enough to have some experience with palace-hotels know that they can sometimes be cold places, both figuratively and literally, but here they’ve done their due diligence with the interiors, turning them comfortable and contemporary while leaving plenty of centuries-old stone exposed. Many of the walls still look like they’re made to survive a torrent of cannon fire, but especially in the suites, enormous fireplaces or showers for two or bathtubs with views go a long way toward warming things up.

This being Extremadura, the hotel is also home to a restaurant that offers ambitious degustation menus highlighting local ingredients — and given the incredible culinary bounty of the surrounding countryside, “local ingredients” really means something here. Meals are taken in the palace’s sunny central courtyard, covered in a glass roof and surrounded by traditional balustrades.

A swim is yet another occasion to be reminded that you’re staying in a 16th-century palace. The pool is located in the building’s old wine cellar, and if it weren’t as well maintained, using it might feel a bit like swimming at a recently unearthed archeology site. That’s pretty much what Palacio Carvajal Girón, and much of Cáceres, is all about — days of leisure set against a backdrop that feels like it’s lost in time.
