You’d expect a hotel in the middle of Sha Tin, Hong Kong’s most populous district, to be nestled among glass-walled office towers and apartments. But this isn’t Kowloon, it’s the New Territories, where vast green spaces break up the skyline. As the first Western chain to venture into the district, Hyatt chose a setting right next to the Chinese University, where the collegiate landscape affords views of both the Kau To Shan Mountains and Tolo Harbor. While it would be a stretch to call it “centrally located,” the airport is only half an hour away, and it’s a three-minute walk from the University railway station.

Brands like Hyatt don’t open Asian mega-properties in order to experiment with scaled-down accommodations, and the Regency is no exception. With 559 guest rooms that range from comfortably spacious suites to deluxe apartments that mimic the experience of living in a good-sized condo, the hotel is positioning itself as the long-term base of operations for travelers on extended stays. However, you don’t have to be in town for a conference to appreciate the crisp, muted luxury of the interiors, where modern conveniences are perfectly integrated with unobtrusive furniture, and massive wall-length windows deliver panoramic views.

In such peaceful surroundings, you’d be forgiven for thinking that the major sights are impossibly far. But Sha Tin has its share of the strange and wonderful, including Ten Thousand Buddhas Monastery and Hong Kong Science Park. If your visit doesn’t leave much time for exploring, you’re under no obligation to leave the hotel, where the Sha Tin 18 restaurant serves authentic northern Chinese cuisine via four show kitchens.
