The wine boom in Mexico&#8217;s Valle de Guadalupe saw the region go from six wineries in 1999 to 150 by 2023. Then, in 2024, the Michelin Guide came to town. Boom, indeed. I decided to drive down from San Diego to see how everyone was handling it.<\/p>\n<p>\u201cWhat you&#8217;ve seen with your eyes when you first came into Valle \u2014 I want the opportunity to have those first eyes again.\u201d That&#8217;s Ange Joy, founder of hotel <a style=\"text-decoration: underline;\" href=\"https:\/\/www.tablethotels.com\/en\/Ensenada-hotels\/casa-olivea\" target=\"_blank\" rel=\"noopener noreferrer\">Casa Olivea<\/a> and its restaurant Olivea Farm To Table. She continued, \u201cIt would be really informative to know, with what I&#8217;m doing and what the next step is.\u201d<\/p>\n<p>What I saw on my virgin drive into \u201cThe Valle\u201d were endless rows of fluttering grapevines. Dotted amongst them: gorgeous, state-of-the-art wineries, each springing up like an oasis of modernity dropped into rolling acres of traditional agricultural land. I was struck by how jarringly hip each of the vineyard entrance signs were. Sleek and minimalist designs that beckon you off the rural highway and into a contemporary wine world. <\/p>\n<p>My expectations of Valle de Guadalupe were clear: some wines will rival those up north in Paso Robles and Napa, the prices should beat them both, and at every turn I&#8217;ll get a little twist of Mexican authenticity. But while the wine and restaurants are world class, the infrastructure hasn\u2019t caught up. Roads are unpaved. The nearest hospital is 30ish minutes away in Ensenada. Water is limited and severe drought is more frequent. Authenticity is under threat.<\/p>\n<p>So as I descend on the newly-minted Mexican wine country, each new winery looking more and more like a facsimile straight out of Napa, the community sits at a crossroads.\u00a0Conform to the desires of well-off tourists who find comfort in opulence and 35-minute showers? Or maintain the accessible, laid-back charm of Valle, and let some of the recognition fade away?<\/p>\n<p style=\"color: #6f4685;\"><em><strong>Explore our picks for <a style=\"text-decoration: underline; color: #6f4685;\" href=\"https:\/\/www.tablethotels.com\/en\/baja-california-hotels?location_id=10727\" target=\"_blank\" rel=\"noopener noreferrer\">the best boutique hotels in Baja California<\/a>.<\/strong><\/em><\/p>\n<figure style=\"width: 970px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" src=\"https:\/\/static.prod.r53.tablethotels.com\/media\/ecs\/global\/magazine\/story-images\/20260926-2-days-in-the-valle\/casa-olivea-pool.jpg\" alt=\"Casa Olivea\" width=\"970\" height=\"auto\" \/><figcaption class=\"wp-caption-text\"><em>Casa Olivea \u2014 Valle de Guadalupe, Mexico<\/em><\/figcaption><\/figure>\n<h6><strong>PART TWO: <em>\u201cWhat we&#8217;re doing is not viral. We want to be classic.\u201d<\/em><\/strong><\/h6>\n<p>Ange Joy knows that most people coming to her hotel and Michelin Star restaurant won\u2019t be doing it on a whim. Most will fly into Tijuana, followed by an 80-minute drive. So Casa Olivea welcomes its wayward travelers with tranquility and serenity. Concierges wear kimonos. Relaxing instrumentals play throughout the ground at the exact volume that isn\u2019t invasive. They even opted to have their courts be Padel instead of the more trendy pickleball because the ball is quieter on impact.\u00a0<\/p>\n<p>The restaurant focuses on sustainability and fresh ingredients directly from its garden. Because of the garden&#8217;s limited acreage, the restaurant can only serve 24 people a night.\u00a0\u201cWe literally have to know day by day by day what&#8217;s happening with each leaf,\u201d Joy tells me. The self-described \u201cperfectionist\u201d mentions she\u2019s planning on expanding the garden. \u201cYou need to see it, you need to live with it and see exactly what&#8217;s happening every single hour of the day.\u201d<\/p>\n<p>The meal is preceded by a walk through the garden, trying ingredients freshly picked by a groundskeeper\u2019s tweezer and placed in your palm. You try thyme, oregano, and a bunch of other staples. But a yellow \u201celectric flower\u201d \u2014 that apparently took months to bloom properly \u2014 made my mouth tingle with a raw buzzing sensation that staggered me. <\/p>\n<p>Then comes the dinner, which fits any kind of highfalutin superlative you want to use. Divine. Sublime. Majestic. Dishes like a \u201csea urchin cr\u00e8me br\u00fbl\u00e9e\u201d or \u201csunflower seed risotto\u201d not only exist, but work extremely well. When a celery root <em>mille-feuille<\/em> dish cooked in haystack butter and topped with white mole hits the table, Executive Chef Daniel Nates makes a surprise appearance to introduce it. By the time I\u2019m done, I knew why he came out. It was one of the best things I\u2019ve ever eaten.<\/p>\n<p style=\"color: #6f4685;\"><em><strong>Book <a style=\"text-decoration: underline; color: #6f4685;\" href=\"https:\/\/www.tablethotels.com\/en\/Ensenada-hotels\/casa-olivea\" target=\"_blank\" rel=\"noopener noreferrer\">Casa Olivea<\/a> on Tablet Hotels.<\/strong><\/em><\/p>\n<p><img decoding=\"async\" src=\"https:\/\/static.prod.r53.tablethotels.com\/media\/ecs\/global\/magazine\/story-images\/20260926-2-days-in-the-valle\/casa-olivea-bedroom.jpg\" alt=\"Casa Olivea\" width=\"970\" height=\"auto\" border=\"0\" data-gae=\"Magazine, Clicked, Image\" \/><\/p>\n<p><img decoding=\"async\" src=\"https:\/\/static.prod.r53.tablethotels.com\/media\/ecs\/global\/magazine\/story-images\/20260926-2-days-in-the-valle\/casa-olivea-patio.jpg\" alt=\"Casa Olivea\" width=\"970\" height=\"auto\" border=\"0\" data-gae=\"Magazine, Clicked, Image\" \/><\/p>\n<p><img decoding=\"async\" src=\"https:\/\/static.prod.r53.tablethotels.com\/media\/ecs\/global\/magazine\/story-images\/20260926-2-days-in-the-valle\/casa-olivea-restaurant.jpg\" alt=\"Casa Olivea\" width=\"970\" height=\"auto\" border=\"0\" data-gae=\"Magazine, Clicked, Image\" \/><\/p>\n<p><img decoding=\"async\" src=\"https:\/\/static.prod.r53.tablethotels.com\/media\/ecs\/global\/magazine\/story-images\/20260926-2-days-in-the-valle\/casa-olivea-meal.jpg\" alt=\"Casa Olivea\" width=\"970\" height=\"auto\" border=\"0\" data-gae=\"Magazine, Clicked, Image\" \/><\/p>\n<figure style=\"width: 970px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" src=\"https:\/\/static.prod.r53.tablethotels.com\/media\/ecs\/global\/magazine\/story-images\/20260926-2-days-in-the-valle\/casa-olivea-garden.jpg\" alt=\"Casa Olivea\" width=\"970\" height=\"auto\" border=\"0\" data-gae=\"Magazine, Clicked, Image\" \/><figcaption class=\"wp-caption-text\"><em>Casa Olivea and Olivea Farm to Table<\/em><\/figcaption><\/figure>\n<h6><strong>PART THREE: <em>\u201cThey have amazing views, but everything else is just okay.\u201d<\/em><\/strong><\/h6>\n<p>An unsolicited review from a Valle local kept ringing in my head as I drove into Hilo Negro winery.\u00a0The views here are, in fact, \u201camazing.\u201d But what I hadn\u2019t considered was that my local insider\u2019s review may be outdated.\u00a0Hilo Negro, an idiom which roughly translates to the English \u201cdon\u2019t reinvent the wheel,\u201d is in the middle of reinventing itself.\u00a0<\/p>\n<p>In May 2025 the winery hired a new manager Antonio Mortera. In January, chef Eduardo Salgado started a tasting menu. Moves made with a specific goal: \u201cWe want to be a Mexican benchmark in the world of wine.\u201d\u00a0At \u2018Emat, the restaurant, I ask if they\u2019re going for a star. Mortera quips back a yes so fast the transparency shocks me. \u2018Emat is convinced Michelin has been to the restaurant before but didn\u2019t like it enough for any kind of distinction. So this time, chef Salgado is pulling out all the stops. And you can tell.<\/p>\n<p>Not every winery and restaurant in Valle is chasing acclaim (or at least admitting it). I stopped by a place called Rondo Del Valle. It has a lovely lavender garden and a cave in their cellar for tastings. I\u2019m sure they\u2019d welcome an accolade or two, but right now they&#8217;re focused on good wine (the red blend Morador is incredible) and a new tap room, and they seem content maintaining what they have.<\/p>\n<p>Which includes another set of stars.<\/p>\n<p>On a clear night, when you step out from your minimalist haven at <a style=\"text-decoration: underline;\" href=\"https:\/\/www.tablethotels.com\/en\/Ensenada-hotels\/mira-earth-studios-128934\" target=\"_blank\" rel=\"noopener noreferrer\">MIRA Earth Studios<\/a>, you&#8217;ll see a celestial wonderland. To preserve the Valle\u2019s glorious galactic view, ordinances were put into place 20 years ago to prevent any artificial light pollution. But as the Valle slowly boomed, more and more lights have started to dull its nocturnal brilliance and \u2014 as a tidy metaphor for the region&#8217;s other growing pains \u2014 more and more locals are becoming concerned.<\/p>\n<p style=\"color: #6f4685;\"><em><strong>Book <a style=\"text-decoration: underline; color: #6f4685;\" href=\"https:\/\/www.tablethotels.com\/en\/Ensenada-hotels\/mira-earth-studios-128934\" target=\"_blank\" rel=\"noopener noreferrer\">MIRA Earth Studios<\/a> on Tablet Hotels.<\/strong><\/em><\/p>\n<p><img decoding=\"async\" src=\"https:\/\/static.prod.r53.tablethotels.com\/media\/ecs\/global\/magazine\/story-images\/20260926-2-days-in-the-valle\/mira-exterior.jpg\" alt=\"MIRA Earth Studios\" width=\"970\" height=\"auto\" border=\"0\" data-gae=\"Magazine, Clicked, Image\" \/><\/p>\n<p><img decoding=\"async\" src=\"https:\/\/static.prod.r53.tablethotels.com\/media\/ecs\/global\/magazine\/story-images\/20260926-2-days-in-the-valle\/mira-room.jpg\" alt=\"MIRA Earth Studios\" width=\"970\" height=\"auto\" border=\"0\" data-gae=\"Magazine, Clicked, Image\" \/><\/p>\n<p><img decoding=\"async\" src=\"https:\/\/static.prod.r53.tablethotels.com\/media\/ecs\/global\/magazine\/story-images\/20260926-2-days-in-the-valle\/mira-exterior-above.jpg\" alt=\"MIRA Earth Studios\" width=\"970\" height=\"auto\" border=\"0\" data-gae=\"Magazine, Clicked, Image\" \/><\/p>\n<figure style=\"width: 970px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" src=\"https:\/\/static.prod.r53.tablethotels.com\/media\/ecs\/global\/magazine\/story-images\/20260926-2-days-in-the-valle\/mira-exterior-rooms.jpg\" alt=\"MIRA Earth Studios\" width=\"970\" height=\"auto\" border=\"0\" data-gae=\"Magazine, Clicked, Image\" \/><figcaption class=\"wp-caption-text\"><em>MIRA Earth Studios<\/em><\/figcaption><\/figure>\n<h6><strong>PART FOUR: <em>\u201cIf we wanted money, we&#8217;d be in a city.\u201d<\/em><\/strong><\/h6>\n<p>\u201cAt night, you see Valle becoming another city. It\u2019s so awful,\u201d Glenda Glenza, Vena Cava\u2019s\u00a0manager explains to me. \u201cUnfortunately, all these people that want Valle to explode, it\u2019s people who are not interested in protecting it.\u201d<\/p>\n<p>Galarza is from Ensenada and remembers the valley\u2019s early days with just a handful of wineries and a single hotel. At Vena Cava, it\u2019s clear there\u2019s a conscious priority to uphold the region&#8217;s original culture and personality. The tasting room\u2019s exterior pops with a myriad of colors making up the wood paneling. The roof is made up from upside-down refurbished boats from the Port of Ensenada, the entrance leading to a tip like a faux hawk.<\/p>\n<p>There\u2019s an authenticity at Vena Cava that is refreshing compared to the other modern, minimalist places I went to. And it\u2019s not that it\u2019s lower quality, it\u2019s just not concerned about keeping up with the Joneses. It\u2019s really the area\u2019s version of \u201cKeep Guadalupe Weird.\u201d\u00a0<\/p>\n<p>\u201cWe need to protect what made Guadalupe famous,\u201d Galarza explains. \u201cWhat made Guadalupe attractive was wine.\u201d<\/p>\n<p>Now that restaurants are starting to factor into the Valle\u2019s appeal, Olivea Farm To Table seems to be the role model to emulate. The food and personality are inextricable from Mexico, the menu is acclaim-worthy, and for all the region\u2019s infrastructure concerns, Olivea is setting the bar ecologically. Joy isn\u2019t in Mexico as some boomtown prospector hoping to make a quick buck, she&#8217;s showing others how to set a pathway to succeed while remaining proudly Valle.<\/p>\n<p>\u201cIf we wanted money, we&#8217;d be in a city,\u201d Joy tells me. \u201cThis is about making something that&#8217;s gonna make just a little bit of difference.\u201d<\/p>\n[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_empty_space height=&#8221;20px&#8221;]<img decoding=\"async\" class=\"thb_image  left   \" src=\"https:\/\/www.tablethotels.com\/magazine\/en\/wp-content\/uploads\/2026\/09\/icons8-fireplace-90-20x20.png\" width=\"20\" height=\"20\" alt=\"icons8-fireplace-90\" title=\"icons8-fireplace-90\" loading=\"lazy\" \/>[vc_column_text]\n[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text]\n<p>&nbsp;<\/p>\n<p style=\"color: #6f4685;\"><em><strong>Explore our picks for the <a style=\"text-decoration: underline;
